This hot, hearty Tofu Curry recipe will help you beat the winter chills! Using our BAMnut Everyday Milk as a base, this curry has the perfect balance of spice and creaminess.

Ingredients
  • 8.5 fl oz (250ml) BAMnut Everyday Milk
  • 1 potato
  • 1 tomato
  • 1 onion
  • 1 stalk curry leaves
  • 1 stalk lemongrass
  • 5 pieces lady finger
  • Cabbage
  • 3 tsp curry powder
  • 4.2 oz (120g) curry paste
  • 2 pcs tofu puff
  • 10.2 fl oz (300ml) water
  • 2 tbsp oil
  • 1 tsp salt
Directions
  1. Stir fry onion and lemongrass with 1 tbsp of oil.
  2. Add in curry powder and curry paste. Continue stir frying until it becomes fragrant.
  3. Once fragrant, add in curry leaves.
  4. Add potato and tofu puff. Continue stir frying for 1-2 minutes.
  5. Add 10.2 fl oz water and cover with a lid. Simmer for 2-3 minutes.
  6. Then add lady fingers and cabbage. Continue simmering for 10 minutes or until vegetables soften.
  7. Add tomato, BAMnut Everyday Milk, and about 3.4 fl oz water or adjust to your desired consistency.
  8. Cover and let it simmer for another 3-5 minutes.
  9. Add salt to taste. Serve while hot!
